Meatloaf is a classic comfort food, but when you stuff it with goodies like cheese, veggies, or even stuffing mix, it becomes a whole new level of delicious. This recipe is quick, simple, and packed with flavor—perfect for a hearty family dinner!
1-2lbsground meatbeef, turkey, or pork (80/20 blend recommended)
1cupbreadcrumbs or stuffing mix
2largeeggs
½cupketchup or BBQ saucedivided
1tspgarlic powder
Filling
1cupshredded cheesemozzarella, cheddar, or pepper jack
1cupchopped veggiesspinach, mushrooms, bell peppers, or zucchini
1tspsalt
1tspblack pepper
Instructions
Preheat oven to 350°F. Line a baking sheet or loaf pan with parchment paper.
In a bowl, combine ground meat, breadcrumbs, eggs, ¼ cup ketchup, garlic powder, salt, and pepper. Mix gently until combined.
Spread half the meat mixture on the baking sheet in a rectangle (8x10 inches). Top with cheese and veggies, leaving a 1-inch border.
Cover with remaining meat mixture, pinching edges to seal. Shape into a loaf.
Brush top with remaining ketchup or BBQ sauce. Bake for 45-55 minutes, until internal temperature reaches 160°F.
Let rest 10 minutes before slicing. Serve warm.
