Drain the cottage cheese by pouring it into a fine mesh strainer and pressing gently to remove excess liquid.
Line a baking sheet with parchment paper and lightly spray with oil.
Drop tablespoon-sized mounds of cottage cheese onto the baking sheet, spacing them 2 inches apart. Flatten each mound into a thin circle with the back of a spoon.
Sprinkle your favorite seasonings over the top of the flattened mounds.
Bake in the oven for 30-40 minutes, checking at 30 minutes. The edges should be golden brown, and the centers light brown.
Let the chips cool on the tray for 10-15 minutes to crisp up.

You can store cooled chips in an airtight container for up to 3 days at room temperature or freeze them for longer storage. Reheat in the oven at 350°F for 5 minutes to restore crispiness.
