A quick, healthy, and versatile dish featuring tender cheese tortellini, juicy beef, and fresh spinach, all coated in a rich garlic butter sauce. Perfect for busy weeknights or cozy family meals.
Boil a large pot of salted water. Add the tortellini and cook according to the package instructions (usually 3-5 minutes). Drain in a colander and set aside.
Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
Reduce the heat to medium-low. Add the minced garlic and butter to the skillet. Stir until the butter melts and the garlic becomes fragrant (1-2 minutes).
Add the spinach to the skillet. Stir until it wilts and shrinks (2-3 minutes).
Mix in the cooked tortellini. Stir gently to coat everything in the garlic butter sauce.
Sprinkle the Parmesan cheese on top. Stir until it melts into the sauce. Add salt, pepper, and red pepper flakes if desired.
Notes
For a vegetarian version, skip the beef and add mushrooms or a meat substitute. Use gluten-free tortellini if needed.
