Instructions
Preheat your oven to 375°F (190°C) and lightly grease two small ramekins or one small baking dish.
In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
Stir in the chopped onion, bell pepper, spinach, garlic powder, onion powder, salt, and pepper.
Divide the mixture into the prepared ramekins or pour into the baking dish.
If using, sprinkle shredded cheese on top.
Bake for 15-20 minutes, or until the eggs are set and slightly golden.
Let cool for a few minutes before serving. Enjoy warm!
