Instructions
Toss the steak bites with 2 tbsp Cajun seasoning in a bowl until evenly coated. Let sit for 10 minutes to soak up the flavor.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the steak bites and cook for 3-4 minutes per side until browned. Remove and set aside.
In the same skillet, melt 2 tbsp butter. Add chopped onion and sauté for 3 minutes until soft. Stir in minced garlic for 1 minute until fragrant.
Stir in 1 cup rice and 1 1/2 cups beef broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until rice is tender.
Stir in 1/2 cup heavy cream and 1/2 cup Parmesan until smooth. Return steak bites to the skillet, mixing gently. Simmer 2-3 minutes.
Add salt and pepper to taste. Garnish with chopped parsley and serve.
