1 ½cupsshredded mozzarella cheese
½cupgrated Parmesan cheese
12ozrotini pasta
¼cupreserved pasta water

Instructions
Boil 12 oz of rotini in salted water until al dente, about 8-10 minutes. Drain, reserving 1/4 cup pasta water, and set aside.
Toss chicken pieces with 2 tablespoons Cajun seasoning. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken for 5-7 minutes until golden and cooked through. Remove and set aside.
In the same skillet, melt 3 tablespoons butter. Add 4 minced garlic cloves and sauté for 1 minute until fragrant.
Pour in 1 cup heavy cream and 1/2 cup chicken broth, stirring well. Simmer for 3-4 minutes until slightly thickened.
Mix in 1 1/2 cups mozzarella and 1/2 cup Parmesan, stirring until melted and creamy. Add reserved pasta water if needed to thin.
Toss in cooked pasta and chicken, coating evenly with sauce. Season with salt and pepper to taste.
Sprinkle with chopped parsley for a fresh touch. Serve hot!
