Heat 2 tablespoons of vegetable oil in a Dutch oven over medium-high heat. Add 2 lbs of beef chuck cubes and brown them on all sides for 5-7 minutes.
Remove beef and set aside. In the same pot, toss in 1 chopped onion, 4 minced garlic cloves, and 1 tablespoon grated ginger. Cook for 3-4 minutes until soft and fragrant.
