Creamy Cajun Tortellini Alfredo With Chicken Bites

2boneless, skinless chicken breastscut into bite-sized pieces
2tbspCajun seasoning
1tbspolive oil
4clovesgarlicminced
1cupheavy cream
½cupchicken broth
1cupgrated Parmesan cheese
12ozcheese tortellini
¼tspsmoked paprika
¼tspred pepper flakesoptional
salt and pepperto taste
1tbspbutter
fresh parsleychopped, for garnish
Instructions
Toss the chicken pieces with Cajun seasoning in a bowl until evenly coated. Let sit for 10 minutes if time allows.
Boil a pot of salted water and cook the tortellini according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken bites and cook for 5-7 minutes until golden and cooked through.
Lower the heat to medium, add butter and minced garlic to the skillet. Stir for 1-2 minutes until fragrant.
Pour in the heavy cream and chicken broth, stirring well. Add Parmesan cheese, smoked paprika, and red pepper flakes if using. Simmer for 3-5 minutes until thickened.
Toss the cooked tortellini and chicken back into the skillet, coating everything in the sauce. Add salt and pepper to taste.
Sprinkle with fresh parsley for garnish and serve hot.
Notes
Adjust the Cajun seasoning to your spice preference. For a lighter sauce, substitute heavy cream with half-and-half. Store leftovers in an airtight container in the fridge for up to 3 days.
