Instructions
Boil a large pot of salted water and cook 12 oz of penne pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
In a bowl, toss the chicken strips with 1 tablespoon Cajun seasoning, 1 tablespoon smoked paprika, and 1/2 teaspoon garlic powder. Coat evenly.
Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 5-7 minutes, flipping occasionally until golden and cooked through. Remove and set aside.
In the same skillet, melt 2 tablespoons butter. Add 4 minced garlic cloves and sauté for 1 minute until fragrant. Pour in 1/2 cup chicken broth and 1/2 cup heavy cream, stirring gently. Simmer for 2-3 minutes.
Stir in 1/4 cup Parmesan cheese until melted. Add the cooked pasta and chicken back to the skillet, tossing to coat. If the sauce is thick, add a splash of reserved pasta water. Season with salt and pepper.
Sprinkle with chopped fresh parsley for a pop of color. Serve hot.
